I find it difficult just working 3 days a week and having to do meals, most of the time you get home at half 5 or 6 and are rushing around the after school clubs and the like so it is essentially we have quick meals. These are easy to prepare and cook and you can always save and freeze leftovers for other days.
Cottage Pie – Potatoes, cottage pie mix, carrots, peas and mince. Fry some mince until its brown in a frying pan, drain and add the cottage pie mixed in with water (one of those packets) then add frozen peas and tinned carrots for quickness. Peel and chop some potatoes up and cook in pan for 30 minutes. Once both are done put the meat and veg in a tin, mash the potatoes and scoop on top of the mince. Put in the oven for 30 minutes and an easy 1 hour recipe.
Beef Enchiladas – Another cheap guide using Old El Paso enchilada kit. Cook some mince in a pan, then drain and add the passata mix and sauce and half the grated cheese. Eat the wraps for 40 seconds in the microwave and then once done put the mixture meat and cheese into the enchilada and wrap up each one, place on tray then pour over the remaining tomato sauce and then add cheese. Bake in the oven for 10 minutes for crispy, delicious and filling enchaladas.
Spaghetti Bolognese – A passata sauce, some spaghetti and some mince are all that is needed. Fry the mince and put the spaghetti to boil in warm water over the hob for 20 minutes. When the mince is cooked after around 5 or 7 minutes then drain off and add the sauce. Once the spaghetti is cooked drain and add to the mince, mix in and then put on the plate. Can also do spaghetti and meatballs just put spaghetti and water on hob, meatballs in oven and then once cooked put both in a pan to warm through with sauce.
Stromboli – Essentially a rolled pizza, even the kids can create this one. Get a pizza base from the local supermarket, rectangular one. Add some passata sauce on the base, add some meat the sliced ones are ideal as well as pepperoni, you can add any pizza style toppings etc and then add mozzarella and parmesan to the middle and then roll up – Cook in the oven for around 25-30 minutes until golden brown.
